Egg and Vegetable Casserole



This Egg and Vegetable Casserole is a wholesome and flavorful dish that makes for a perfect breakfast or brunch option. Packed with eggs, colorful bell peppers, onions, and cheese, it's both nutritious and satisfying.

Ingredients:

  • 6 eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your oven to 350F 175C

In a skillet, saut the diced bell peppers and onions until they become tender

In a large mixing bowl, whisk together the eggs, milk, salt, and pepper

Add the sauted vegetables and shredded cheddar cheese to the egg mixture and stir to combine

Grease a casserole dish with cooking spray and pour the egg and vegetable mixture into it

Bake in the preheated oven for 25-30 minutes or until the casserole is set and lightly browned on top

Remove from the oven and let it cool slightly before serving
