Sweet Pork Taco Bowls
Making these Sweet Pork Taco Bowls in the slow cooker makes them easy and tasty. Because the pork is soft, sweet, and full of flavor, it's great on top of bowls of rice and beans.
Ingredients:
- 3 lbs pork shoulder, trimmed and cut into chunks
- 1 cup brown sugar
- 1 cup salsa
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped cilantro for garnish
- Cooked rice, for serving
- Black beans, for serving
- Chopped lettuce, for serving
- Diced tomatoes, for serving
- Sliced avocado, for serving
- Sour cream, for serving
Instructions:
Place pork shoulder chunks in the slow cooker
In a bowl, mix together brown sugar, salsa, orange juice, lime juice, soy sauce, minced garlic, chili powder, cumin, paprika, salt, and black pepper
Pour the mixture over the pork in the slow cooker
Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shreds with a fork
Once cooked, shred the pork using two forks and mix it with the sauce in the slow cooker
Serve the sweet pork over cooked rice and black beans in bowls
Top with chopped lettuce, diced tomatoes, sliced avocado, sour cream, and chopped cilantro
