Easy Vegan Potato Salad



This Easy Vegan Potato Salad is creamy, tangy, and perfect for summer picnics and barbecues. It's made with simple ingredients and comes together in no time.

Ingredients:

  • 1 kg potatoes, peeled and diced
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

Boil the potatoes in salted water until tender, about 10-15 minutes

Drain and let cool

In a large bowl, mix together the vegan mayonnaise, Dijon mustard, apple cider vinegar, celery, red onion, and parsley

Add the cooled potatoes to the bowl and gently mix until well combined

Season with salt and pepper to taste

Refrigerate for at least 1 hour before serving to allow the flavors to meld together
